Sergi Arola, a stellar Catalan celebrity chef who has adopted Madrid as his own, runs this highly personalised temple to all that’s innovative in Spanish gastronomy. The menus change with the seasons but this is culinary indulgence at its finest, the sort of place where creativity, presentation and taste are everything.
