Casa Duque
Segovia's oldest dining establishment (open since 1895) is a local institution and a great place to sample cochinillo (suckling pig). It's a classy place with an old-world atmosphere and consistently great food and wine that draws Madrid celebrities for weekend lunches when reservations are essential. For less formality, try its cueva (cave) - which can be entered at Calle de Santa Engracia 10 - in the same building where you can get tapas and yummy cazuelas (stews).
