Lonely Planet review for Martín Berasategui Restaurant

With three Michelin stars and dozens of other awards, this superlative restaurant, about 9km southwest of San Sebastián, is considered by foodies to be one of the best restaurants in the world. The chef, Martín Berasategui, doesn't approach cooking in the same way as the rest of us. He approaches it as a science and the results are tastes you never knew existed. Reserve well ahead.

In a beautiful country setting, 20 minutes out of San Sebastian you will find the hidden treasure of Martin Berasategui. like rolling hills? Views of farmhouses and grazing sheep? you’re in luck. Fronted entirely by glass, the dining rooms overlooks the vast Basque countryside, and the ensuing meal delightfully compliments this vista.

The food: this is good food, some of it is amazing food. But it isn’t all fireworks. There are a few filler plates that lack the punch, the flair of others. There is a little too much green and beige, and a fair amount of ingredients in gelatinous form. Also, as an Aussie, asian-western fusion is not as mindblowing for me as it would be for the European clientele. But make no mistake, this is a 3 Michelin star restaurant and the food is incredible.

The best: The standout was the 7th dish for me, the plate was a work of art and the iodized sauce left me salivating and wondering here this skill had been hiding. However the juicy sweet dewlap hidden beneath the egg in the 6th course was an amazing burst of flavour I can still taste now.

The verdict: This is a great restaurant, beautifully situated with food that is skilfully prepared and a crew that works together smoothly. But it falls just shy of outstanding. Yes, it is inventive and skilful, but the same techniques are repeated once or twice and it takes some of the excitement away, “oh look, its in liquid form, oh, more gelatine”

The menu is the same price as Arzak, 175€, but the difference between #29 and #8 really shows. I’m happy to have experienced MB, for all the raves I have heard, but I probably won’t be back, and I don’t think I’ll be dreaming of any of these dishes for weeks, or days to come (unlike that damned smoked yoghurt…)
