    This cosy little restaurant, tucked beneath a 17th-century signal tower, is one of the city's best seafood places. The menu ranges widely in price, from cheaper dishes such as mackerel with beetroot, chilli and orange dressing, to more expensive delights such as North Berwick lobster served with garlic and herb butter.

    Cafe Royal Oyster Bar

    Pass through the revolving doors on the corner of West Register St and you're transported back to Victorian times – a palace of glinting mahogany, polished brass, marble floors, stained glass, Doulton tiles, gilded cornices and starched table linen so thick that it creaks when you fold it. The menu is mostly classic seafood, from oysters on ice to Coquilles St Jacques Parisienne (scallops with mushrooms and white wine) and lobster thermidor, augmented by a handful of beef and game dishes.

    Ondine

    New on the scene in 2009 (part of the Hotel Missoni), Ondine has rapidly become one of Edinburgh's finest seafood restaurants, with a menu based on sustainably sourced fish. Take an octopus-inspired seat at the curved Crustacean Bar and tuck into lobster thermidor or a roast shellfish platter. The two-course lunch (noon to 2.30pm) and pretheatre (5pm to 6.30pm) menu costs £15.

    Loch Fyne

    Housed in the old Victorian fish market building next to Newhaven harbour, this stylish restaurant and seafood deli serves up spectacular shellfish platters (£40, enough for two people) of fresh oysters, mussels, scallops, clams, cockles, crab, lobster and langoustines, as well as sustainably fished or farmed salmon, prawns, cod, halibut and haddock.

    This more sophisticated version of the famous Fishers Bistro in Leith, with its granite-topped tables, warm yellow walls and a nautical theme, specialises in superior Scottish seafood – the knowledgeable staff serve up plump and succulent oysters, meltingly sweet scallops, and sea bass that’s been grilled to perfection.

    Mussel Inn

    Owned by west-coast shellfish farmers, the Mussel Inn provides a direct outlet for fresh Scottish seafood. The busy restaurant, decorated with bright beechwood indoors, spills out onto the pavement in summer. A kilogram pot of mussels with a choice of sauces – try leek, Dijon mustard and cream – costs £11.50.

    The atmospheric dining room next door to the popular Shore pub is a haven of wood-panelled peace, with old photographs, nautical knick-knacks, fresh flowers and an open fire adding to the romantic theme. The menu changes daily and specialises in Scottish seafood and game.
