Fiesta, Filipino Style

Perhaps I was mistaken. I had envisioned a bistro as a place that specializes in finger food and cocktails, a let-your-hair-down kind of place after a hard day at work. Or maybe I’ve read too much of Hemingway, whose characters were habitués of dark, smoke-choked bistros. Dining at Bistro Remedios, the idealized bistro in my mind crumbled into ashes--and was gladly replaced by a well-lit, festive restaurant serving sumptuous Filipino food.
For starters, there is Hipon Binondo, fresh river shrimp lightly salted and fried to a crisp, with sliced green chilies to spice it up. Eating it was a very compelling experience. I was popping shrimp after crunchy shrimp into my mouth. Other appetizers for the adventurous include betute (fried frogs with pork and spice stuffing) and kamaru (sautéed crickets).
Then there's Ensaladang Amplaya, finely sliced bitter melon marinated in vinegar and freshly ground black pepper and topped with a Vietnamese garlic dressing. It was quite refreshing, the medley of bittermelon, tomato, and onion harmonizing for that fresh, enticing taste.
The highlight of the menu is Kalderetang Baka, beef stew done Filipino-style. The beef was very tender though not overcooked as to be shredded, and the sauce was flavorful and thick without being greasy. With steaming plain rice, the dish is pure heaven.
Dessert was the whimsically named Maria Clara’s Secret, which was actually rice cake with mango and the novelty element, buffalo cream. Far from being enigmatic, it was a straight-forward dessert: mellow, smooth and not too sweet.
After eating at Bistro Remedios, it occurred to me that the place was a lot like home, a sanctuary where one could have comfort food to nourish the body. This bistro wasn’t as Hemingway-esque as I imagined, but no matter: it was a blessing to find myself in familiar grounds.
