Two stars later, Hellstrøm continues to apply lessons learned in the exacting kitchens of Paris and Lyon, to glam up old favourites and create something entirely his own. His restaurant represents the pinnacle of fine dining in Norway, serving modern European cooking with an emphasis on local and, when possible, organic ingredients.
