A splash of sunset colors stolen straight from Ibiza enlivens this sociable tapas bar and restaurant, just off Aria’s hotel lobby. Start off with sangria, then dance through the French and Spanish tapas menu, from imported cured hams and goat-cheese-stuffed peppers to hot skillets of mixed seafood paella. Or try his rollicking new CityCenter venture, Todd English PUB a strangely fun cross between a British pub and a frat party, with creative sliders, English pub classics and an interesting promotion: if you drink your beer in less than seven seconds, it's on the house.

A groovy spot for nightlife in Upper Queen Anne, the Sapphire has a well-stocked bar and serves Spanish-influenced Mediterranean fare in a chic dining room with sapphire, red and purple walls. The black-painted facade and the neon sign outside might not fit with Queen Anne's style, but don't let it turn you off.

This new-ish very un-Yellowknife restaurant stands in marked contrast to the fish shacks of Old Town. Fancy Fuego wouldn't look out of place in Toronto, with its plush furnishings and mood lighting. The food is modern fusion with Spanish inflections and there's live music most nights to fill the gaps between courses. Upstairs is the more casual Twist Lounge.
