Love the Cote D'azure. You'll love it. But Nice was not my favourite. I would suggest staying in Cannes instead - and doing your day...

San Sebastian is amazing. We drove there, so I can't advise you on transportation - but I loved the city.

I suggest picnic on the Champ de Mars by the Effile tower - very romantic & fun! And if you run out of wine there are always guys walking...
