The general principles for aperitif-making are laid down in David Embury’s “The Fine Art of Mixing Drinks”…[His] general formulation is unimprovable. He states that an aperitif or cocktail: 1. should be dry & cold, or at least should stimulate the appetite, as sweet & hot drinks do not; 2. should always keep the drinker intuitively apprised of how many drinks he has had, so that drunkenness does not creep up on him unanticipated, as it has been known to do with thick or eggy drinks.
