    Yabaton

    Not everything in Ginza has to be chic and sleek. Yabaton sells miso-katsu, a very workmanlike take on tonkatsu that’s slathered in miso sauce. Waraji-tonkatsu is a big-as-your-head flattened cutlet, or try kani-korokke (crab croquettes). Yabaton-salada (boiled pork with miso sesame sauce over vegetables) is kinda sorta good for you. Look for the pig wearing a sumō wrestler’s apron, one block west of Shōwa-dōri.

    Kimukatsu

    You can find tonkatsu throughout Tokyo, but this rustically contemporary shop serves it millefeuille style, with the pork sliced and stacked before breading and frying, which makes it unusually light and juicy. Expect a line out the door at lunchtime. From JR Ebisu Station east exit, bear diagonally to the right, and the restaurant is past the stop light, down the block from FedEx.

    Maisen

    Maisen turns out righteous, crisp tonkatsu that draws consistent queues. Thankfully, the place is housed in a converted bathhouse, so there's plenty of room for the many souls craving Kagoshima kurobuta pork. If you're on the run, pick up a bentō at the takeaway window – the katsu sandwiches are particularly delicious.
