    Brac

The latest addition to the Florentine vegetarian scene is also by far the most sophisticated. Set around a bright little courtyard, it offers a serene retreat. The airy dining room is formed by a glassed-in loggia (covered area on the side of a building) painted white and packed with books, and the all-vegetarian menu includes cheesy pastas, grilled or sautéd vegetables, and crunchy salads like a vegan mixture of fresh fennel, blood-orange and almonds. Brac also doubles as a bookstore, while its courtyard is ideal for a relaxed drink.

    Sedano Allegro

Clearly not that many vegans are circulating in Florence, as this vegetarian hangout has found it necessary to add a fish and seafood menu to its vegetarian specials (many of which don't meet vegan needs either). If you don't want fish you could try a filetto di formaggio al whisky (cheese 'fillet' done in whisky). There is a pleasant, shady courtyard out the back.

    Caffellatte

With a bas-relief marble cow adorning its counter, this quirky, turn-of-the-20th-century milk shop has, since the 1980s, pioneered vegetarian and organic cooking, from its veggies and dairy products to the namesake caffè latte. The soups are thick and bursting with flavour, and the scones with fresh cream are worthy of a Cotswald teashop.

    Il Vegetariano

This self-service veggie restaurant cooks up a great selection of Tuscan vegetable dishes, build-your-own salads and mains eaten around shared wooden tables. There’s always a vegan option and the chalked-up menu changes daily.
