This dimly lit, staid place has long been Ajmer’s best, and it’s still the restaurant of choice for Mayo College students. There’s a good selection of veg and nonveg Indian, Chinese and continental food (including pizzas).

Alwar’s best restaurant is in the heart of the old town, and has been serving up inexpensive, fresh, tasty pure-veg food since 1957. You have to pay Rs10 per person to eat in the air-con section – but it is worth it. Try the special kheer (creamy rice pudding).

LMB is an Art Deco–meets-disco, sattvik (pure vegetarian) restaurant that’s been going strong since 1954. The menu includes a warning from Krishna about people who like putrid and polluted food (tamasic). All meals are made with pure ghee (clarified butter), and the puri (deep-fried bread) snacks are the best in town. Recommended is the Rajasthani thali, the paneer tikka stuffed with fennel, and the signature kulfi.

Mid Town is fine dining with a choice of seating, live folk music and great veg food. It serves Rajasthani specialities, including some particular to Jodhpur, such as chakki-ka-sagh (wheat dumpling cooked in rich gravy) and kabuli (vegetables with rice, milk, bread and fruit). The Rajasthani thali costs Rs100.
