    Petra and Deflef Schlegel give deceptively simple sounding dishes the star treatment and so it was only natural when they were the first in Leipzig to get the Michelin nod. Pairing punctilious craftsmanship with bottomless imagination, they create such exquisitely calibrated dishes as smoked char with foie gras or warm chocolate cake with lavender ice cream. It's a relaxed spot inside the Gewandhaus concert hall.

    At this inspired port of call affiliated with the adjacent baker and organic supermarket, only regionally sourced ingredients find their destiny in such internationally inspired dishes as lamb ragout, green haddock curry and black squid risotto. The austere dining room does little to distract you from your meal.

    The views from the 27th floor are breathtaking but you're here to enjoy the lofty cuisine of Peter Maria Schnurr, Saxony's top toque with two Michelin stars to his credit. You'll doubtless remember his fearless orchestrations of flavours and textures – dubbed cuisine passion legere – long after getting your credit card bill. A digestif in the sleek bar would be a suitable coda.
