Impossibly irresistible, the Impossible is a barn dating back to 1754 near the Aiguille du Midi cable car that has been transformed into a rustic but modern eating space - lots of wood, wicker, warm lighting, gilded gold frames and glass chandeliers. Quail stuffed with foie gras, garlic butter-oozing snails or pineapple carpaccio with ginger and mango sorbet are quintessential French dishes cooked with a twist at this ode to Sylvain Saudan (b 1936), extreme-skiing pioneer and self-proclaimed 'skier of the impossible'.

My favourite restaurant in the Alps

Auro and Donatella Bucci used to own a wonderful restaurant in Courmayeur called La Clotze which we discovered on day when cross country skiing (as it is located in Val Ferret). We absolutely fell in love with them and everything about their food, wine, and philosophy.
Auro is an addict of slow food: food that follows recipes that you do not find in most restaurants. He tries to do everything using organic ingredients and often sauces have been cooking for several days before being served (and he tries to avoid adding cream). All pasta is made in-house so come here to discover the most wonderful dishes of the Piemont and Val d'Aosta regions such as rabbit ravioli and wild boar pasta.
Recently the couple has left Courmayeur to settle in Chamonix where they bought the Impossible, a famous restaurant in Chamonix center that used to be run by WIm Robberse. They have kept the delightful wooden interiors with the big open chimney (where they cook meats over the open fire).
Donatella is one of the best hosts we know and her team is very professional. Her daughter is not a sommelier but knows her wines like one and you will discover wonderful French and Italian wines, many of which are organic (and trust me, these are good wines).
To really understand the philosophy of Auro, just look at his web page and you will see that this is a rare breed of chef. I heartily recommend this restaurant as someone who has eaten in most restaurants in the Alps and would rate this up there amongst the more unique and more traditional.
If you come for Valentine-s Day as we do each year (driving one hour from Geneva for the occasion) she is always dressed in a red dress and shoes to mark the occassion.Good for: Romance, atmosphere, food, service
