The small village of Lemi, 25km west of Lappeenranta, is famous for its lemin särä (roast mutton). This traditional dish - cooked in a birch trough that adds amazing depths of flavour - has been described as 'one of the seven wonders of Finland'. And so it should - it takes nine hours to prepare and must be ordered at least two days in advance!
