    Cojean is one of the places that redefined the Parisian idea of a quick lunch. Where are those buttered baguettes with processed ham, hi-cal saucisson and chicken slathered in mayonnaise? Gone, gone and gone. Instead you get a Champs-Élysées chic interior and health-conscious fare (salads, quiches, soups) that probably would have met with bewildered looks a mere decade ago.

    As next-door neighbour to one of Paris’ most famous bakers, this is not any old sandwich bar. Rather, it is an ultrachic spot to lunch between designer boutiques on open sandwiches cut from that celebrated Poilâne bread and fabulously topped with gourmet goodies such as foie gras, smoked duck, gooey St-Marcellin cheese and Bayonne ham.

    This environmentally friendly take on Dublin fast food looks like the juice bar at the end of the universe. The massive kitchen is fronted by a space-age counter and the communal benches are very human and sociable. Just checking out the huge pre-packaged display, with all its juices, salads and cold dishes, makes your vitamin count surge, while the hot menu mainly features hunky and healthy Asian-style filled wraps.

    Cosi

    An institution in the 6th for a quick, cheap eat in its upstairs dining room or to take to a park, Cosi might just be Paris’ most imaginative sandwich maker, with sandwich names like Stonker, Tom Dooley and Naked Willi chalked on the blackboard. Classical music plays in the background and homemade foccacia bread is still warm from the oven.

    The shellfish gracing these sarnies has been landed on the quay a few steps away, and much of the fish has been smoked locally. Opt to fill your bread with mackerel with horseradish mayo, kiln-roast salmon with dill, or classic, delicious Dartmouth crab.
