    With its cafeteria-style interior, this reasonably priced locals-only joint isn't much to look at. But the wood-fired lahmacun (Turkish-style pizza; TL6) and expertly grilled kebaps are served with so many complimentary extras, you'll want to return. If you get lost, ask for directions at the landmark Best Western Khan Hotel at Kazım Özlap Caddesi 55.

    Cappadocia Kebap Center

    This tiny, friendly joint is a great place for a fast feed. You can enjoy a chicken döner kebap sandwich for a mere TL3 or acılı ezme (spicy tomato and onion paste) kebap sandwich for TL4, accompanied by chips (TL3.50) and a beer (TL3.50) or fresh orange juice (TL3).

    Kebapçı İskender

    A legend throughout all of Turkey, this dimly lit kebap shop opened its doors in 1867 serving what would become one of the most popular meat platters in the nation. In fact, the recipe was such a wild success that the owners patented the name: İskender kebap. These days, pictures of good old Izzy himself line the walls of the faux-heritage building (think KFC's Colonel Sanders sans goatee.) There are roughly a dozen other branches around Bursa, though this one is the original. If you're visiting the botanic garden in Soğanlı be sure to check out the larger iteration, with satin-draped dining rooms and a 'museum' dedicated to the coveted shaved meat.

    Can Can Pide ve Kebap Salonu

    Looking for something very cheap and cheerful? Fantastically prepared çorba (soup), pide and Adana dürüm (beef kebap rolled in pitta) are here at bargain prices. It's opposite the landmark Plaza Cinema.

    After a day and a night of round-the-clocktails on Bar St, this is a good place for an early breakfast (TL6), and there's an array of tasty veggie dishes (TL4 to TL5) too.

    Paşa Kebab

    Considered locally to offer the best kebaps in town, this unpretentious place has a well-priced menu complete with useful little photos of dishes. Try the Paşa Special (TL12.50), a gigantic (and delicious) concoction of beef, tomato and cheese. There's also pizza (TL9.50 to TL13.50).

    Kırçiçeği

    This local chain is pricey but worth it for the great pide (TL8) – including ıspanaklı peynirli (cheese and spinach) and kuşbaşılı kaşarlı ('bird's head'; the bits of meat supposedly resemble birds' heads) – and kebaps. The ayran (yoghurt drink) brand, Eker, from Bursa, is not widely available.

    Kebabistan

    You're within safe boundaries here: the kitchen turns out expertly cooked kebaps (go for the kuşbaşsı, with little morsels of beef). A second branch, across the street, specialises in pide. Getting there is half the fun: it's in a side street where men can be seen sitting on low chairs, playing backgammon and drinking tea. And yes, it may just have the planet's best name for a kebap eatery.

    One of the best kebap restaurants in the capital, Urfalı is fast and friendly and seats eighty-plus hungry diners, from merry students to a three-generation family. The çiğer şiş (TL8) and the urfa kebap (TL8) won't disappoint.

    Uludağ Kebap

    If you don't have a mean case of the meat sweats after gobbling down platefuls of İskender kebap, then try 'Bursa kebap' (same thing; different name) at Uludağ. Like İskender, there are several branches of this savoury chain – our favourite location is the swankified spot on the ground level of Kent Meydanı, which seems to have borrowed a bit of its design aesthetic from the Starbucks next door.

    Just opposite the first roundabout and the turning to Kalamar, the 'Original Adana' is just that and serves the best kebaps, pide and lahmacun (Turkish 'pizza') in town.

    This central spot also claims to be the original İskender maker. Leave the legal machinations to the lawyers and tuck into the slightly cheaper, but equally tasty, kebaps at this main-drag spot in a cosy wooden abode.

    Brisk, buzzing, filling and good value, this popular eatery on the main street doles out well-executed pide (Turkish-style pizza) and satisfying kebaps in rosy surrounds. The food is fresh and hygienically prepared.

    2000 Restaurant

    This hole in the wall across from the main mosque attracts for two reasons: its superb dürüm (kebap wrapped in pita) and its generous opening hours.
