Icelandic chef Agnar Sverisson is cooking up a treat using tricks he learnt while working at Raymond Blanc’s Manoir Aux Quat’ Saisons. The focus here is on mixing different textures, but you can rest easy – Iceland’s famous hakarl (rotten shark) has yet to appear on the menu.
