Spanish and criollo food is the specialty here, owing to his hacienda's location near the original colonial capital of El Salvador. Try the aromatic lomo de cerdo español (Spanish-style pork chop) or grilled cordoñiz (quail). The hacienda grows many of its own herbs and vegetables and even brews indigenous liquors, including chicha and chaparro (both made from corn), and others fermented from nance, cashew fruit and coconut.
