Salt
A converted 18th-century corn warehouse is the beautiful venue for this Terence Conran-designed Modern Danish/French hotel restaurant close to the site of the Skuespiller Huset. Seafood, local organic meats and game are regulars on an ambitious menu that might include confit of monkfish, crisp fried crab with pomegranate or roast rack of rabbit.

Slotskælderen Hos Gitte Kik
This lunchtime smørrebrød restaurant is full of atmosphere and traditional Danish charm. Just point to the sandwich you want, and Gitte will prepare it and send it to your table.
-
Spiseloppen
Christiania's evening offering is something rather more ambitious than Morgenstedet. Spiseloppen, in the Loppen building, serves a global menu, with the cuisine depending on the nationality of the chef in the kitchen each night.
-
Sticks 'n' Sushi
This handy Japanese restaurant has added some local twists to its menu to make things more appealing to Danes. Many of the items, such as sushi rolls, are served on sticks popsicle-style, similar to the way grilled items such as yakitori are served in Japan.

Søren K
Bathed in light on even the dourest of days, the sleek, minimalist restaurant of the Black Diamond is one of the most stylish in the city. Its kitchen is dedicated to low-fat, light dishes made from strictly seasonal ingredients.
-
Taste
Just around the corner from Marmorkirken, this delectable French-owned deli-takeaway-café serves mostly organic, homemade cakes, bread, salads, chocolates and salad along with the best muffins in Copenhagen.
-
The Custom House
Sir Terence Conran's recently opened gourmet complex is housed in the old ferry terminal, where boats used to embark for Sweden. As well as a small, rather pointless deli, there are three more appealing upscale restaurants here. At Bacino the menu is contemporary but authentic Italian, with dishes including langoustine with pumpkin risotto, or filet of halibut with basil, courgette and almond cream.
-
The Paul
White-hot inside and out, the Michelin-starred restaurant with the terrible name is a must for anyone who wants a memorable meal in relaxed yet beautiful surrounds. English-born chef Paul Cunningham is highly acclaimed, and a look at the menu shows why. Dishes such as butter-roasted turbot (from the Danish west coast) with celeriac are sublime. Reservations essential.

Thorvaldsen Hus
This stylish restaurant-café-bar with views to Christiansborg Slotskirke offers a sumptuous menu of Franco-Danish food, such as grilled scallops with cauliflower puree and foie gras with shallot marmalade and winter truffle.
-
Umami
This glamorous restaurant, overseen by chef Francis Cardenau and designed by Orbit of London as some kind of Wallpaper magazine fantasy, sees classical French cuisine (saddle of rabbit, for instance) flirt heavily with modern Japanese cooking to usually sensational effect. It is at its best in the evenings and on weekends when the DJs do their thing.

Viva
A kind of floating version of Aura, this unique restaurant, on board a ship moored beside Langebro, has the same team behind it and a similarly inventive menu of tapas-sized, Modern European dishes.
-
Wokshop Cantina
This great value, Wagamama-style modern Thai/Asian place is close to Kongens Nytorv to the rear of Hotel d'Angleterre.
-
Zeleste
If the restaurants on nearby Nyhavn don't appeal, this excellent, globally-influenced restaurant featuring exotic ingredients like pata negra ham and Argentinean beef on its menu (they like to describe themselves as 'con-fusion cooking') is a good alternative. In summer be sure to request a table outside in the pretty courtyard to the rear.
