Bayamo's two paladares are old school; ie you'll feel as if you're eating in someone's hastily converted front room in an atmosphere of quiet subterfuge. The Polinesio's meals are served upstairs in an open-fronted family dining room with four or five tables. There's an improvised bar and a 'waiter' trying hard to look officious in a bow-tie. The menu depends on what ingredients are available, though there's usually a bottle of Spanish wine hiding somewhere.
