Snacking can be sorted in a flash at San Gines (China’s first branch of the Madrid cafe dating to 1894), where glistening, deep-fried churros await. They may not catch on with older yóutiáo -chewing Shanghainese, who will stick to their fried dough sticks (which some say inspired churros in the first place). But more inquisitive younger Chinese are beating a path here to dunk their churros in the savoury or warm chocolate sauces or ice creams provided (or chomp them plain).
