Qímín Organic Hotpot information
Hotpot aficionados may scoff at the idea of healthy huǒguō (hotpot) and iced organic vinegar drinks, but if Alice Waters ever comes to Shànghǎi, we recommend she make this one of her first stops. True, the renovated art-deco villa, low-fat lamb and local vegies are a long way from what generally passes for hotpot in the rest of the country, but Qímín does make use of a 6th-century treatise on agriculture and food preparation (the Qímín Yàoshù ), effectively taking an old tradition in a new direction.
