About 3.5 miles north of Copper Bank, on the coast and surrounded by jungle, this rustic little beach resort is perhaps our favorite spot in northern Belize. What's so great about the Cerros Beach Resort? It isn't just its location, set as it is on the white-sand shore of the crystal blue side of Corozal Bay. Neither is it the facilities and amenities: four beautiful, hardwood, thatched-roof cabañas with hot solar showers and sea-facing porches, not to mention free use of kayaks and nature trails. Nor is it the highly recommended food prepared by the owner, a former pastry chef from Miami who makes tangy, to-die-for ceviche and delicious, decadent chocolate cake. What makes us love this place is all these things and one other factor: Cerros Beach Resort is (almost) totally ecologically sustainable, operating on solar and wind power. Come for the kayaking, cake and ceviche ; stay for the low-carbon footprint.
