Set atop a mountain with brilliant views of the surrounding Cayo District, this newly opened eco-resort is both high end and unique. Spread out over 28 hilly acres, Amber has five unique cabins, each named after one of the cultures that makes up the tapestry of Belizean life. Each cabin is built and furnished with locally sourced and crafted materials. Our favorite: The Garifuna, which features a king sized bed suspended from ropes, indoor rock-tiled shower and an outdoor stone pool for bathing beneath the stars. Other rooms also have their own outdoor tubs. There's a beautiful onsite restaurant serving local and international cuisine (meals BZ$12 and up) and a hilltop pool with an attached bar, auspiciouslly named Wild Things. Guests at Amber Sunset can enjoy nature walks on the grounds and management will arrange tours to runins, caves and other areas around Belize.
