Not only are the seasonal dishes at this elegant restaurant individually paired with beers, they're also cooked in Belgium's favourite nectar (such as hare, turnip and cranberry ravioli in Oude Gueuze, served with a Petrus Winterbier). Three-, four- and five-course menus can be ordered with a beer accompanying each course. There's also the option of pairing with wines, but that would be missing the point.

They asked me in a bar on the Grote Markt whether I wanted a normal beer or a large one. I didn't realise that when they meant large, they meant a glass bucket. Anyway, I didn't refuse the glass bucket once it arrived, and I've always wondered whether my fondness for Den Dyver is related to the fact that I had drunk a glass bucket of Hoegaarden before we went there.
However, even the most sober of diners could not fail to be taken by the attention to detail, understated style and immaculate tastes of Den Dyver. You must order either the three or five course set menu with a selection of beers; every one is perfectly matched to a delectable Belgian ale, sometimes one brewed especially for the house. The meals are a bit modish, but the cheeses, meats and desserts are ideally paired with the beers, and even the weirder meats and taste combinations are seductive when served by such friendly people, in such fine surroundings.
