Marque IV
High-class dining hits waterfront Hobart at Marque IV on Elizabeth St Pier. Begin with freshly shucked Bruny Island oysters with limoncello and chilli, followed by slow-roasted pork belly with feta and almond tortellini. Desserts are also sensational.

Piccalilly
This historic corner site has seen lots of comings and goings, but it’s now home to super-swish Piccalilly. Creative dishes like cannelloni of braised lamb shoulder with mushroom bolognese, and King George whiting with sauce vierge and citrus jellyfish are just part of what’s on offer.

Restaurant 373
Artsy, high-end eatery on the Elizabeth St strip in a lovely old shopfront with wide floorboards and splashes of dark red paint and white linen. The young owners give local produce an innovative twist – try the Longford eye fillet or the duck breast with foie gras dumplings. Excellent service, a brilliant wine list and desserts, plus a splurge-worthy multi-course tasting menu ($100).

Tasmania Inn
Once the seediest, sticky-carpet booze room in town, the old Tasmania Inn has been gutted by savvy new Canuck owners who've introduced a good-bang-for-your-buck bar menu, upmarket Mod Oz mains and carefully edited live music. Nice work!

Garagistes
The very fine Garagistes delivers innovative small plates in a simple, yet dramatic, dining room. Owner Luke Burgess pushes the culinary envelope with dishes including salted cabbage, ricotta and barley salad and raw jack mackerel with pickles, young elderberries and rhubarb. Sunday lunch is four highly recommended courses. Bookings essential.
