Marque's crisp, immaculate décor provides a level-headed platform for adventurous cooking. It's one of those places where culinary experimentation at first seems ridiculous, but you walk away smiling. Try the milk-fed veal loin with Meyer lemon, liquorice, pumpkin and coffee.

Marque resides in the trendy inner-city suburb of Surry Hills and is small and inconspicuous, only about 40-50 covers at most, with a quiet and classy Australian/French fusion ambience. Meaning there are the modern mirrored walls, and black walls, contrasted with crisp white table cloths, French waiters, and a not-unpleasant hint of pretension.
My experience at Marque was the Friday set lunch for $45. A meal at Marque (degustation) will set you back about $200/head, and I can’t vouch for the quality of that option. However I’m certain that my tasting lunch gives me a good overall view. If you disagree, feel free to let me know.
One thing to note: the Friday set lunch menu changes weekly so it’s likely the any or all of these dishes won’t be found next time you pop by. They should give you an idea of the style and skills you can look forward to experiencing though.
The food: Marque is adventurous eating. There are no particularly daring cuts of meat or outrageous flavour combinations, but the cooking techniques and the ideas behind the dishes are creative and outside the box. This oscillates between good and frustrating throughout the meal. A few times I felt like I was spending more time thinking about my food than actually enjoying it. Having said that there were a couple of incredible tasting dishes that really blew me away with their inventiveness.
The verdict: I enjoyed Marque, the atmosphere was good, the service friendly, and the meal interesting. It wasn’t a standout restaurant for me, even after only having eaten in one of the Top restaurants up to that point. I’d go back, for the $45 lunch, but not for $200.

My friends and I had the degustation menu at Marque. Service was excellent. The degustation menu offers a very interesting range of dishes from excellent to less than ordinary.
They put some really interesting combinations of ingredients on to the plates.
Our favourite was the organic root vegetables with ham consomme. The ham consomme was just beautiful.
The only let down was the duck dish. The roast muscovy duck was beautiful. Unfortunately, the sauce ruined the whole dish.
Overall, we are very happy with our degustation experience.
