Clean, clear, stylish atmosphere; intelligent service with a few performative swooshes (a bit of drama in the delivery of your coffee, but no so much that you need to interrupt your conversation to acknowledge the frustrated performer in the waiter). Like Panama Dining up the road (and the Falconer in Oxford Street in Sydney), Cavallero is the sort of place that looks like it intends to build loyalty by offering well priced above average food and wine in booths (and a good group table up the back). An excellent place to catch up with friends when you don't want grungy but you don't have the patience (or budget) for white table cloths, eucalyptus foam and beetroot soil (in other words, fine dining trickery).
